Might as well start with the list, right? Here we go.
Bitter Foods That Are Good For You:
1. Bitter Gourd:
Also known as bitter melon, the name says it all. But it is a great source of vitamin A, C, folate, and potassium. It has fewer calories and helps in controlling the blood sugar levels. Bitter gourd is actually a superfood that improves vision, makes the skin healthy, and prevents cell damage.
The vegetable can be used in different ways. Indians cook bitter gourd in both simple and elaborate methods to mask the bitterness and enhance the taste. You can also drink raw bitter gourd juice for the best results. It’s not easy, we know.
2. Kale:
Kale belongs to the cabbage family and has been known as a superfood in recent times. It is full of nutrients and antioxidants that help the body fight aging and prevent cancer. It also helps fight against tumors.
Kale can be used in various ways, though it is mostly boiled and added to salads. It can be added to soups to reduce its bitterness. You can also blend it with other vegetables to make raw juice.

3. Arugula (Salad Rocket):
Arugula is a green leafy vegetable and also belongs to the cabbage family. It is also known as salad rocket or rucola. You just add the leaves to a fresh salad as it is or tear them up. The peppery flavor of the leaves adds a pleasant taste to the salads.
Arugula helps in detoxifying the blood and liver stimulation. It is also one of the cancer-protecting vegetables. Arugula also boosts immunity and has a cooling effect on the body.
4. Eggplant:
Eggplant is one of the most common bitter foods. We use it often enough that some of us forget it is actually bitter because it tastes that good. These purple beauties are cooked and served in countless ways. It depends on where you live. Italians and Indians have a special love for eggplants.
Eggplants are rich in fiber and nutrients. The juice of an eggplant works on rheumatism, kidney ailments, and sciatica. It also aids with digestion, though the bitterness might cause some discomfort in the tummy.

5. Artichokes:
Artichokes are a favorite of the Romans and Egyptians. They are bitter (obviously) and tart. But they have a great taste when cooked. Italians prepare a delicacy by stuffing artichokes. Even baby artichokes are famous (more so because they aren’t always available).
The unique taste or artichokes is due to the presence of cynarine. Apart from that, this vegetable contains minerals, iron, magnesium, calcium, vitamin B1 and C along with provitamin A. It helps in improving digestion, stimulating the liver by increasing bile production, reducing cholesterol, and preventing gallbladder stones.
6. Broccoli:
Are bitter vegetable healthy? We don’t need any other veggie apart from broccoli to talk about this, right? Compared to the famous Brussels sprouts (we’ll deal with them next), broccoli has a milder taste. It is full of fiber, vitamin C, and antioxidants.
Broccoli is one of the best vegetables that protect us from cancer. And cooking them is relatively easy, isn’t it? Just sauté them or make a thick soup. Add to other dishes and serve. The trick is to not overcook broccoli. That’s the only thing you have to be careful about.

7. Brussels Sprouts:
Sinigrin is the substance that causes bitterness in Brussels sprouts and broccoli and acts as a cancer-protecting agent. Since Brussels sprouts have more sinigrin, they are more bitter (and healthier). The sprouts are filled with vitamin B and C and fiber.
The dislike for this vegetable is quite high. But if you get hold of the right recipe, you won’t even feel the bitterness. Yep. There are ways to cook Brussels sprouts that make them tasty and healthy.
Conclusion
We did say that you might love these vegetables, didn’t we? Why not try to eat these vegetables more often? These are so full of vitamins, minerals, and antioxidants that will help you cleanse your internal system and lower the risk of diabetes, cancer, heart attack, etc.
